Pudim de Leite
2 cans
sweet condensed milk
2 cans milk
8 eggs
Mix all ingredients
in a large bowl until well combined.
In
a saucepan, heat 1 c. sugar and 1/2 c. water. Bring to a boil
and simmer until it urns golden brown. Carefully pour this mixture into pudim
mold. Roll it around to coat the bottom and sides of the mold.
Pour milk filling into mold. Fill the double-boiler part of the mold with about an inch of water, then place inner mold on top. Cover and cook on top of the stove for about 30 minutes. Let cool for at least 4 hours (better overnight) and invert onto a large plate just before serving.
If you don't have a Brazilian Pudim mold, use a glass dish of some sort and bake it in the oven (350F), in a water bath. Place the glass dish in a large rectangular baking pan filled with about one inch of hot water. Bake for about one hour or until a knife comes out clean.
